How the ranking is worked out
Every weapon row is run through the same attack-rating code as the AR calculator: base attack times the upgrade's rate, plus a bonus per scaling stat from the weapon's scaling curve at your stat. A damage type whose stat requirement you miss falls to 60% of its base with no bonus, and two-handing multiplies Strength by 1.5 (bows always count as two-handed). Smithing-stone weapons use the first upgrade level you pick, somber weapons the second, each capped at its own maximum.
Status buildup is per hit at your Arcane: bleed, poison, sleep and madness scale with Arcane when the weapon has Arcane scaling; frost, scarlet rot and death blight never do. Scaling letters are the menu's, at the upgrade shown. Ash of War affinities are offered only on weapons that take them; untick “Allow affinities” to see the weapons as they drop.
With a boss picked, the order is the damage one hit deals at a 100% motion value after that placement's flat defense (area and NG+ scaling applied) and its negation for each damage type. Split-damage weapons lose more to defense than their AR suggests, which is why the order changes. Real attacks multiply this by their motion value; the kill-speed simulator runs actual movesets and status procs. Plan the rest of a build in the build planner, or browse the weapons database. More in the methodology.
